Ingredients
  • 5 cups All Purpose Flour
  • For the stuffing:
  • 2 Onions chopped
  • 2 Cups Ground chicken(turkey)
  • 2 tbsp Green chillies
  • 1 tsp Black pepper
  • ½ tsp Tomato paste
  • 3 tbsp Coriander leaves
  • 1 tsp Mint leaves
  • 2 tsp Garlic Ginger-chopped
  • 1 tsp Cumin seeds
  • 1 tsp Ajwain seeds
  • 1 tsp Red chilli powder
  • 1 Pinch Saffron
  • Oil or Ghee
  • Salt to taste
Methods
  1. Make a soft dough by mixing and kneading flour with water,Rest the dough for at least an hour.
  2. Heat the pan with very little oil and sauté onions & garlic till golden brown then add ground chicken or turkey with tomato paste ,salt , chilli powder and black pepper.
  3. Mix all the above mentioned ingredients together with ground chicken mixture to make the stuffing and cool down the mixture before stuffing.
  4. Divide the dough into four equal portions and make the balls using dry flour.
  5. Now take one ball and roll it into a small round. place some stuffing in the middle of the rolled ball, Fold the filled rounds and seal the edges by pinching the dough.
  6. Roll out the kulcha with a rolling pin using dry flour as required to prevent it from sticking.
  7. Place the kulcha on a hot tawa with very little oil or ghee toast on both side till cooked good or place on a grill in the oven till slightly brown and soft.
  8. Serve hot with Palak panner, rice dish or meat varities..etc
