Ingredients
  • Toor dhal-1cup(uncooked)
  • Chilli powder-1tsp
  • Turmeric powder-1/4tsp
  • Jaggery-1tsp
  • Grated coconut-1tbsp
  • Tamarind -1 lemon size
  • Onion-1(medium)
  • Tomatoes-3(medium)
  • Carrot-1/4cup
  • Beans-1/4cup
  • Okar-1/4cup
  • Eggplant-1/4cup
  • Drumstick-1/4cup
  • Coriander leaves
  • Water-4 cups plus
  • Oil -3 tbsp
  • Salt to taste
  • For seasoning:
  • Mustard-1tsp
  • Cumin-1/4tsp
  • Curry leaves-8
  • Red chilli-2
  • Grind to powder:
  • Red chilli -3
  • Whole dhania-2tbsp
  • Pepper-1/4 tsp
  • Channa dhal -2tsp
  • Cumin-1tsp
  • Fenugreek-1tsp
Methods
  1. Pressure cook toor dhal with tumeric powder and little oil.
  2. Dry roast the red chilli,whole dhania,pepper,channa dhal,cumin,fenugreek and grind it into fine powder.
  3. Heat the kadai with oil and season it with mustard,cumin,and curry leaves.
  4. Saute onions,tomatoes,vegetable,ground powder,chilli powder,turmeric powder,tamarind extract and water,cover and cook till vegetables are soft.
  5. Finally,add the cooked toor dhal,jaggery and dry grated coconut,simmer for about 5 minutes and garnish it with corinaderleaves.
  6. Serve over hot rice,idli dosa...etc
