Macaroni, Chicken & Vegetables in Barbeque Sauce

Ingredients
  • Two cups shell macaroni
  • 250 grams boneless chicken cut into one-inch size pieces
  • one carrot (grated)
  • one cup grated cabbage
  • half capsicum (thin, long strips)
  • half teaspoon oil
  • two tablespoons chopped onion
  • two cloves of garlic
  • For the BBQ sauce:
  • two cups water
  • quarter cup brown sugar
  • quarter cup vinegar
  • one cup finely chopped onion
  • two cloves of garlic
  • three-fourth cup ketchup
  • one & a half teaspoon black pepper
  • one tablespoon Worcestershire sauce
  • one teaspoon paprika or red chilli powder
  • two teaspoons salt
Methods
  1. Boil the macaroni in three cups chicken stock.
  2. When cooked, strain and keep aside in a wide plate or big bowl so it does not stick. (Remaining stock can be reused for some other dish)
  3. Put all ingredients of the sauce in a saucepan.
  4. Bring to a boil.
  5. Reduce heat and simmer till sauce is thick and keep aside.
  6. In a kadai take some oil, garlic and onion and saute till onion turns pinkish.
  7. Add chicken a pinch of salt.
  8. Stir fry for five minutes.
  9. Add grated/chopped vegetables and stir fry for another five minutes.
  10. Add boiled macaroni, two-three tablespoons BBQ sauce and heat for five minutes, stirring continuously to mix well.
