Ingredients
  • Carrot-1cup(diced)
  • Beans-1cup(diced)
  • Drumstick-1cup(cut into 1/2 inch piece)
  • Eggplant-1cup(diced)
  • Raw plantian-1cup(peeled & diced)
  • Peas-1cup
  • water
  • Salt
  • Grind to paste
  • Coconut -1cup
  • Cumin-2tsp
  • Rice-2tsp
  • Green chilli-4 to 5
  • Water
  • For seasonning
  • Coconut oil-2tbsp
  • Mustard-1tsp
  • Asafoetida-1 pinch
  • Curry leaves-10
Methods
  1. Cook all vegatables in boiling water till soft and tender.
  2. Drain well and set it aside.
  3. Soak coconut,cumin,green chilli,rice in little water,then grind into smooth paste.
  4. Heat the kadai with coconut oil,season it with mustard,curry leaves and asafoetida.
  5. Add all the cooked vegetable and the ground paste with salt.
  6. Saute till the coconut mixture coats all the vegetables.
  7. Serve with rice & roti.

I have had variations in avial.It varies from place to place and cook to cook.Possibly high skill level is necessary.You can have a single vegitable avial viz.:beans
