TIRANGAA THEME SALAD

| Ingredients |
- Two medium sized carrots (grated)
- Dry roasted and coarsely ground groundnuts two tbsp
- Safola oil one-fourth tsp
- mustard seeds one-fourth tsp
- methi seeds one-eighth tsp
- Red chilli powder half tsp
- Tofu 250 grams
- dhania seeds one tbsp
- zeera one tsp
- saunf one tsp
- cabbage (grated) 250 grams
- spring onions only stems three
- green chillies three
- chopped hara dhania half cup
- chaat masala one heaped tbsp
- salt to taste
- lemon juice to taste

| Methods |
- Grate carrots and cabbage and keep aside in separate bowls.
- Crush the Tofu and keep in a separate bowl.
- In oil put mustard seeds.
- When they splutter add methi seeds and stir for a second.
- Put off the gas, add red chilli powder and stir for a couple of seconds.
- Add this and the crushed groundnuts to the carrots.
- Keep aside.
- Dry roast dhania, zeera and saunf.
- When cool, powder it and add to the tofu.
- Keep aside.
- Chop spring onion stems, hara dhania, green chillies and add to the grated cabbage.
- Add chaat masala.
- Now add salt and lemon juice to all the three mixtures and toss well.
- To form the TIRANGAA
- On a rectangular tray first arrange a band of the carrot mixture at the top to form the saffron color of our flag.
- Then arrange the tofu mixture in the middle and finally the cabbage mixture.
- Even out the surfaces with a palette knife.
