CREAM OF CARROT SOUP

| Ingredients |
- Onion-1(chopped)
- Garlic-2(chopped)
- Olive oil-1tbsp
- Carrot-1lb/450g(chopped)
- Mixed herb-1tsp
- Vege stock-1 1/2 pint
- Sour cream-1/2 cup
- Salt & pepper

| Methods |
- Saute the chopped onion and garlic in the oil until transparent.
- Add the carrots,mixed herbs and stock.
- Bring to the boil and simmer for about 30 minutes the carrots are soft.
- Cool a little and then liquidise until smooth.
- Add the soured cream,season to taste and mix thoroughly.
- Heat through gently and serve with garlic bread,crackers..etc
