Ingredients
  • Onion-1(chopped)
  • Garlic-2(chopped)
  • Olive oil-1tbsp
  • Carrot-1lb/450g(chopped)
  • Mixed herb-1tsp
  • Vege stock-1 1/2 pint
  • Sour cream-1/2 cup
  • Salt & pepper
Methods
  1. Saute the chopped onion and garlic in the oil until transparent.
  2. Add the carrots,mixed herbs and stock.
  3. Bring to the boil and simmer for about 30 minutes the carrots are soft.
  4. Cool a little and then liquidise until smooth.
  5. Add the soured cream,season to taste and mix thoroughly.
  6. Heat through gently and serve with garlic bread,crackers..etc
