Ingredients
  • 2 pounds skinless boneless chicken breast
  • 1/4 cup fresh lemon juice
  • 1/4 cup plain yogurt
  • 4 garlic cloves, minced
  • 1 1/2 tablespoons ground coriander
  • 2 tablespoons (1/4 stick) butter, melted
  • 2 teaspoons ground cumin
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon salt
  • 1/2 cayenne
  • 1/8 teaspoon ground ginger
  • 12 6- to 8-inch bamboo skewers, soaked in water 30 minutes
Methods
  1. Cut chicken breasts into 1 inch pieces.
  2. Combine with lemon juice, and salt in a bowl.
  3. Cover and let stand for 30 minutes.
  4. In a separate bowl combine yogurt, garlic, coriander, cumin, turmeric, and cayenne.
  5. Mix well and add to chicken.
  6. Toss, cover and refrigerate for about 3 hours.
  7. Preheat grill.
  8. Tread chicken onto skewers.
  9. Brush with butter and grill for about 6-8 minutes or until done.
  10. Turn frequently while grilling.
