Alluwadi (Colocasia fritters)

| Ingredients |
- Colocasia leaves 12
- FOR THE BATTER:
- Small grained rice 1 cup
- Moong dal (green gram dal) 1 cup
- Red chilli powder 1 1/2 tsp
- Salt 1 tsp
- Jaggery (grated) 2 tsp
- Tamarind (ball size of a small lemon)
- Turmeric powder 1/4 tsp
- Asafoetida (hing) 1/4 tsp
- FOR THE TADKA:
- Oil 1 tsp
- Mustard seeds 1 tsp

| Methods |
- Wash and pat-dry the leaves and cut stems
- Grind all ingredients of the batter into a finely ground but thick paste
- Place one leaf on a dinner plate with the inner side of the leaf facing you
- Apply sufficient batter to cover the leaf surface except the edges
- Place another leaf and apply again
- Repeat this process with two more leaves - using four leaves altogether
- Gently roll the leaves folding the sides as you roll to form a tight roll
- Tie the roll with sring so that it doesn't open
- Repeat this process with the other leaves to form three rolls in all
- Pressure cook the rolls for 7-8 minutes
- Remove and let cool then cut into 1" size slices
- In a kadai heat oil and put mustard seeds
- When they splutter, add the slices and stir-fry them gently for 10 minutes
- Serve hot.
